Box Elder

Scientific Name: Acer negundo
Abundance: common
What: sap, seeds, young sprout, inner bark
How: sap is boiled to syrup; young sprouts raw or cooked; inner bark boiled; seeds are roasted
Where: lowland & moist areas; often along water; windbreaks
When: spring, summer, fall, winter

Dangers: none, though young seedlings may look like Poison Ivy

Medicinal Summary:
Inner Bark - vomit inducer

Leaf Arrangement: Leaves are opposite-alternating, meaning they are arranged in pairs along the stems but each pair is shifted 90 degrees from the pairs above and below it.

Leaf Shape: Leaves are compound, typically with three to seven leaflets, each leaflet measuring 2 to 4 inches in length.

Leaf Venation: The leaflets have prominent veins.

Leaf Margin: Leaflet margins are serrated, featuring small teeth.

Flower Structure: Box elder trees produce small, inconspicuous flowers in clusters, typically appearing in early spring.

Flower Color: Flowers are typically yellowish-green.

Seed: The seeds are paired, winged samaras, each measuring about 1 to 2 inches in length.

Bark: The bark is smooth and light gray on younger trees, becoming rougher with age, displaying furrows and ridges.

Height: Box elder trees can grow to be 30 to 50 feet tall.

Hairs: None on leaves or other surfaces.

Color of Seeds: The seeds, or samaras, start green when young and then mature to a light brown with a papery wing.

A large part of my childhood was spent up among the branches of the giant Box Elder tree in our backyard. Well, it seemed like a giant tree when I was a kid. These amazingly fast-growing trees max out around 70 feet tall and 30 feet wide. The wood is weak and any big winds will cause branches to drop including those greater than one foot in diameter. Never park under a Box Elder in a storm! These damaged areas quickly lead to the inner heartwood rotting away, making it popular with assorted birds, mammals, and bugs. They do not handle the full Texas sun well, preferring to grow in the partial shade of other trees. They fairly common in East Texas, much less common in the Hill Country and North Texas, and rare to non-existent in West Texas

Box Elders have thick, coarse bark when mature and compound leaves. Both these features hide the fact that they are in the maple (Acer) family. Being maples, they can be tapped for sugary sap in the late winter. Complete directions for tapping maples for syrup can be found here: Making Maple Syrup & Sugar.

Come the warmth of spring, many Box Elder seedlings will sprout up. These are tasty treats to deer, rabbits, and humans! Get them when they are still tender and under eight inches tall. It will have a green, smooth bark and three-part leaves. Actually, the young seedlings look a bit like Poison Ivy to the untrained eye so make sure you know what you are eating. The first set of side leaves of Box Elder are symmetrical whereas Poison Ivy side leaves are asymmetrical with "thumbs" pointing away from the center leaf. The second set of Box Elder leaves will have asymmetrical "thumbs", similar to Poison Ivy.

The inner bark of these trees, like other maples, are edible and contain a fair amount of carbohydrates. Finely chop this inner bark then boil it. Be sure to drink the water to get all the calories. This boiled bark will be a bit sweeter than most other non-maple barks but a flavoring agent will help improve its taste. This inner bark is available all year long though its sugar-content will be highest in the later winter when the sap is flowing.

Box Elder seeds are, in my opinion, the best part of the tree. They grow in "helicopter" shells with two joined together at the stem. Come fall, the ripe shells will break apart and fall spinning to the ground. This fluttering motion will send them a small distance from the mother tree. Treat these seeds like pumpkin seeds except they must be freed from their helicopter shell before boiling them for ten minutes in salt water then salting and roasting them at 400F for 10-20 minutes. Cooking time depends on how crisp you want the final product.

Buffalo Gourd

Scientific Name(s): Cucurbita foetidissima
Abundance: common
What: flower, seeds, root
How: flowers raw or fried; seeds roasted or boiled; root as tea
Where: dry fields
When: summer, fall, winter
Nutritional Value: calories and protein in the seeds
Dangers: flesh of the gourd is extremely bitter and can be poisonous in large doses due to saponins.

Leaf Arrangement: The leaves of Cucurbita foetidissima are arranged alternately along the stem.

Leaf Shape: Leaves are broadly ovate to heart-shaped, measuring up to 14" long and 7" wide near the base. 

Leaf Venation: Pinnate venation, with veins running from the base to the tip of each leaf lobe.

Leaf Margin: The leaf margin is typically serrated or toothed.

Leaf Color: The leaves are usually gray-green.

Flower Structure: The flowers are large and showy, with five petals reaching 4" across and a prominent central column of stamens and pistils.

Flower Color: Flowers are typically bright yellow.

Fruit: The fruit is a small, mottled/striped skin, and spherical gourd 4" across. They start out green and turn a stripped yellow as the mature. Inside is mostly stringy white flesh with many seeds.

Seed: Inside the gourd are large, flat, off-white seeds.

Stem: The stem is typically creeping along the ground rather than climbing.

Root: Produces a giant taproot, may be human-shaped, multiple feet in size.

Hairs: Rough hairs may be present on some parts of the plant, including the stem.

Height: Cucurbita foetidissima can trail along the ground or climb on other vegetation and can reach varying heights.

Nose and eye find this plant at nearly the same time. The large, heart-shaped leaves and yellow, 5-petaled flowers of Buffalo Gourd give off an unpleasant smell which reminds me of nasty gym socks. Starting in mid-summer the fruit appear. Looking first like small, round watermelons these fruit eventually turn more yellow as they mature but never grow bigger than a baseball. Buffalo Gourd vines can stretch many yards from a central taproot and the beings perennials, show up in the same spot year after year. It's large taproot makes the plant very drought resistant and it grows best in the drier areas of Texas, especially in the Hill country and westward.

The flowers, similar to squash blossom, can be eaten both raw and fried. They do have a bad odor and are somewhat bitter when raw.

Buffalo gourd seeds were a staple food of early Texas Native Americans. The seeds must be completely cleaned of any gourd flesh or else they will be extremely bitter. Once completely cleaned they can be boiled and mashed into a porridge or roasted like pumpkin seeds and have a similar flavor. These seeds do contain a large amount of calories in the form of oil (25-42%) as well as a significant concentration of protein (22-35%).

The large taproot of Buffalo Gourds were to be strong medicine by Native Americans. These roots were used internally as a tea and also externally in poultices. Due to the high concentration of saponins and other potent chemicals healing with this root should only be tried under the direction of a trained herbalist!

Saponins are found in both the plant's root and in the skin of the gourds and are capable of producing a lather when vigorously combined with water. Because of this they were used as a soap substitute.

Carolina Geranium

Scientific Name(s): Geranium carolinianum
Abundance: common
What: roots
How: medicinal
Where: yards, fields
When: winter, spring
Nutritional Value: none (not edible)
Dangers: Carolina geraniums are NOT edible but are only used externally medicinally in wounds and gargles, do not swallow.

Medicinal Summary:
Root - astringent; antibacterial; anti-fungal; soothes sore throat/mouth; anti-diarrheal (poultice, powder, tisane)
Whole plant - pain reliever, fever reducer, anti-inflammatory (tisane, tincture)

Leaf Arrangement: The leaves of Geranium carolinianum are arranged in a basal rosette. This means the leaves primarily grow at the base of the plant, close to the ground.

Leaf Shape: The leaves are deeply lobed, giving them a somewhat cut or dissected appearance. Each leaf typically has 5 to 7 lobes.

Venation: The venation is palmate, meaning the veins radiate outward from a single point like the fingers on a hand.

Leaf Margin: The margins of the leaves are crenate, meaning they have rounded teeth.

Leaf Color: The leaves are generally green, but they may have a hint of red or purple, especially in cooler temperatures.

Flower Structure: The flowers have five petals and are arranged in loose clusters. Each petal has a small, rounded notch at the tip. Individual flowers are about 1/5" across.

Flower Color: The flowers are usually light purple to pink, sometimes with darker veins.

Fruits: The fruit is a beaked capsule, which when mature, splits open to release seeds. The 'beak' of the capsule resembles a crane's bill, hence the common name 'Cranesbill.'

Seeds: The seeds are small, oblong, and generally have a reticulated surface.

Stems: The stems are erect to ascending, and can be hairy. They are typically green, but like the leaves, may have reddish to purplish tinges.

Plant Height: This plant usually grows to a height of about 10 to 18 inches.

Hairs: The stems and sometimes the leaves are covered in small hairs, which can give the plant a slightly fuzzy appearance.

Many a yard, flowerbed and garden see this low, creeping weed show up in the Texas "winter". Left unpacked, it'll turn into a leggy, small bush around one foot tall and two feet across. The leaves are deeply lobed with rounded, toothed edges. Stems are hairy. The pink flowers eventually turn into a long, pointed seedpod thingy. The plant grows outwards from a single taproot and that taproot is the medicinal part that you'll want. The bigger the aboveground plant the bigger this root so put off harvesting it as long as possible.

The root of Carolina geranium is very astringent which makes it excellent for stopping bleeding. Astringent compounds cause capillaries to constrict, thereby shutting down minor bleeding. If you're spraying arterial blood or have a deep slash through several medium-to-large veins you're out of luck. Think nosebleed level of bleeding or smaller. These astringent molecules will also give some relief to a sore throat if gargled but don't swallow the decoction made from the root. After a minute of swishing/gargling spit it out.

Too use this root, simply pull it out of the ground and rub/rip away the small, side roots from the main taproot. You can use it fresh if you chop it up really finely then boil 1-2 teaspoons full in 1 cup water for ten minutes. My lawyer says I need to remind people to let this solution cool before using. Native Americans would dry the root, grind it into a fine powder, then sprinkle this powder into wounds to stop bleeding. Personally, I've never tried this powdered root method but hey, it might be good to know when the zombies come.

Two mimics of this plant are the poisonous Creeping Buttercup (Ranunculus repens) and edible Carolina Bristle Mallow (Modiola caroliniana).

You can see the leaves of the creeping buttercup are much less deeply lobed, shinier, and smoother. The stems are smooth and the entire plant hugs the ground more closely than Carolina geraniums. Creeping buttercups contain a chemical that, when consumed, makes mammals hypersensitive to sunlight. Skin hit by sunlight almost immediately starts to blister...basically, creeping buttercups turn you into a redhead!

Carolina bristle mallow has very coarse leaves and stems. It creeps along the ground and puts down roots wherever the stem touches the ground. It is used to make a cooling tea.

Chickweed

Scientific name: Stellaria media and Cerastium vulgatum
Abundance: common
What: leaves, stems
How: raw or cooked
Where: sunny, shady disturbed areas
When: winter, spring
Nutritional Value: Rich in iron, potassium, other minerals, and vitamins A, D, B, C, and minerals
Dangers: Chickweed contain a small amount of saponins (soap-like) chemicals. Excessive quantities of it can cause an upset stomach.

Medicinal Summary:
Leaves/Stems/Flowers - diuretic; reduces urinary tract pain and inflammations; gastrointestinal inflammations; soothes skin inflammations; soothes insect bites and stings (poultice, tincture, tisane)

Leaf Arrangement: The leaves of Stellaria media are opposite-alternating, meaning they are paired at each node along the stem, but each pair is rotated 90 degrees on the stem from the pairs above and below it.

Leaf Shape: The leaves are ovate to lanceolate in shape. This means they are shaped like an egg or a lance tip, with the wider part at the base in the case of ovate leaves.

Venation: The venation pattern of Stellaria media is pinnate. In this pattern, a central vein runs along the leaf length with smaller veins branching out from it.

Leaf Margin: The leaf margins are entire, indicating that the edges of the leaves are smooth and unnotched.

Leaf Color: The leaves exhibit a vibrant green color.

Flower Structure: The flowers are small and star-shaped, typically with five deeply cleft petals, giving the appearance of ten petals.

Flower Color: The flowers are white.

Fruit: The fruit is a small, dry capsule that opens at maturity to release seeds.

Seeds: Seeds are numerous and brown, with a slightly rough texture.

Stem: The stems are round, slender, and can be either trailing or erect. 

Hairs: Stellaria media exhibits fine hairs which are present on only one side of the stem at a time and switch sides at each pair of leaf nodes. Flower buds and seed pods are also covered in fine hairs. Leaves are hairless.

Height: This plant typically grows to about 6 to 12 inches tall.

Chickweed

Chickweed makes its appearance in the winter and early spring of Texas lawns, often prefering to grow right up against the base of a house. Its sprouts were a common source of greens on early navy ships and helped prevent scurvy before the discovery of vitamin C. Their small amount of saponins help give dishes containing chickweed a creamy texture, especially when diced finely and simmered in pasta sauces. It's also tastes wonderful in pesto, salsas, and raw food/vegan "green drinks" as well as greatly increasing the nutritional value of these foods.

The hairy "Mouse-Eared Chickweed" Cerastium vulgatum must be cooked before eating to soften the hairs on the stems and leaves.

Corn Salad

Scientific Name(s): Valerianella olitoria, V. locusta, & other Vealerianella species
Abundance: rare
What: leaves
How: raw or cooked when young before flowers appear
Where: moist shaded yards, borders, and woods
When: fall, winter (in Houston), spring
Nutritional Value: Vitamins A,Bs,C
Dangers: Beware the inedible, similar-looking Cudweed.

Leaf Arrangement: Forms a basal rosette.

Leaf Shape:  Club-shaped (oblanceolate to spatulate) with a broader base narrowing towards the tip. 

Venation: Pinnate, with a central vein more pronounced than the lateral ones.

Margin: Entire, with smooth edges.

Leaf Color: Dark green, with a slightly glossy appearance.

Flower Structure: Tiny flowers grouped in loose cymes at the top of the stem.

Flower Color: Pale blue to white, sometimes with a hint of pink.

Fruit: A small, dry nutlet, less than 1/8" in diameter, slightly lobed.

Seeds: Typically one seed per fruit, small and enclosed within the nutlet.

Stem: Grows in a fractal pattern - one stem coming out of the ground which branches into two stems, and each of those may branch into another two, and each of those may branch again into two before ending with the flowers at the tips.

Hairs: Generally lacks hairs, presenting a smooth surface.

Plant Height: Ranges from 6 to 20 inches in height.

I have found it in Harris & Montgomery counties as well as assorted places in East Texas, from Dallas to the Louisiana border.

Quickly sprouting up in late spring, Corn salad appears in sandy, shaded soil. It's delicate club-shaped leaves grow in an alternating opposite arrangement and that is when you want to eat it. In just a few weeks the plant's single stem will split into two stalks and then each of those will split into two more. Where the stem splits the leaves fuse into a single, pointy leaf surrounding the stem. At the top of the stalks a small cluster of white flowers appear, followed quickly by it going to seed. This plant grows and dies in just a few weeks.

Corn salad is not native to North America but came over with French settlers. It is a common, domestic salad vegetable in France. It has escape French gardens and can now be found in growing in thin stands in sandy, well-drained soil but needs a fair amount of moisture.

Be careful not to mistake Cudweed (Pseudognaphalium species) for Corn Salad. Picture below is the inedible (but medicinal and smokable) Cudweed. Note it has many more leaves than corn salad and the underside of the leaves are gray.

Cow Parsnip

Scientific name: Heracleum maximum
Abundance: rare
What: young leaves, stem, roots, seeds
How: leaves-raw/cooked; stem and roots-peel then boil; seeds-dry then add to soups and stews
Where: shade, borders, woods, marsh
When: spring, summer, fall
Nutritional Value: sugars/calories in stem and roots
Dangers: WARNING: Similar-looking to deadly, foul-smelling hemlock! Also, juice and hairs of cow parsnip can irritate skin and contains suspected cancer-causing chemicals.

Leaf Arrangement: Alternate, with leaves large and deeply lobed.

Leaf Shape: Broadly ovate, with deep lobes and a serrated or toothed margin. Mature leaves can be over 16" across at their widest.

Venation: Palmate, with a prominent central vein and visible lateral veins branching off in each lobe.

Margin: Serrated or toothed, particularly towards the leaf tip.

Leaf Color: Bright to dark green, with a slightly coarse texture.

Flower Structure: Compound umbels, large and flat-topped, with numerous tiny flowers in each umbel.

Flower Color: White, sometimes with a slight pinkish hue.

Fruit: Flat, oval, two-seeded schizocarps.

Seeds: Small, flat, and attached in pairs.

Stem: Tall, stout, and hollow, often with purplish or reddish blotches.

Hairs: Generally hairless, but the stem may have fine bristles.

Height: Typically grows between 4 to 10 feet tall.

Look for Cow Parsnips in partially shady areas where water (usually a stream) meets woods. They seem to prefer hardwood forests to pine.

While not quite on par with Pokeweed, Cow Parsnips do require caution when harvesting and preparing the young shoots. Like Pokeweed, harvest the shoots when they're under 9" tall but you'll also want to take the cow parsnip's root. Wear gloves and arm guards while collecting them so the furanocoumarin chemical in the sap and surface needles can't adhere to your skin. If this chemical does get on you it'll make those areas of skin super-sensitive to sunlight, resulting in patches of 2nd degree sunburns.

Still the plant is quite tasty. Saute the diced-up leaves, stem, and roots in butter, oil, or bacon grease along with onions or garlic for a few minutes. They'll shrink a little but not disappearing like spinach. Hit them with a dash of cedar-infused apple cider vinegar and have at them!
