This map is VERY incomplete. Betony appears all through Gulf & East Texas.

Large patches of betony plants can be found in local forest from mid-fall until mid/late spring. During this time the tubers are growing, reaching full size of over four inches long. Not every plant produces a tuber, you need to dig up quite a few to find them. The looser the soil the bigger the tubers will grow. These plants readily reproduce from bits of tubers and roots and so are considered to be invasive.

Betony flowers in the spring and this is a sign the plant is almost done for the year. You can eat the flowers or make a tea from them but they don't have the strong medicinal properties of the younger leaves. Usually by the time the flowers appear it's too late to harvest betony leaves.

Betony has a long history of being an herbal "magic bullet" capable of curing many ills. First things first, junipers and cedars are the same thing. That being said, there are two types of cedar trees in Texas. The first, Junipers ashei, is the small, multi-trunked Hill Country cedar sometimes referred to as Mountain Cedar which takes on a roundish shape. More to the east and northern parts of Texas you'll find the Red Cedar (Juniperus virginiana) which has a single trunk and grows quite tall with a pyramidal shape. The trunks of both are covered with loosely peeling, fibrous bark. The inner wood of both is reddish in color and very aromatic. When used in campfires it'll "pop" a lot and throw sparks.

The Hill Country cedars, Juniperus ashei, can be used in multiple ways. Starting with the leaves, they can be smoked, made into tea, or used to infuse vinegar. Native Americans smoked the leaves both for pleasure and medicinally to help with lung and sinus issues/infections. Cedar tea contains the anti-viral compound known as deoxypodophyllotoxin which may be why such tea was historically used to treat many viral-based diseases. The berries, which are not true berries but rather a very strange cone like a pine cone, can be nibbled raw but they have a very potent flavor so the are best used in small quantities as a flavoring agent or seasoning. German settlers loved to ad 2-4 berries to each quart of sauerkraut. Gin alcohol is made by adding juniper/cedar berries during or after the distillation step. Soaking the berries in vodka for a few weeks creates your own version.

My favorite thing to do with J. ashei is to infuse apple cider vinegar with it to make a "forager balsamic vinegar. To do this take a fresh, 16oz bottle of apple cider vinegar and pour off 1/2 cup. Now take a bunch of fresh J. ashei leaf-tips and start twisting and smashing them...not too much as you don't want lots of little pieces. Just enough so that their oils can steep into the vinegar. Now start adding these abused cedar leaf-tips into the bottle until the vinegar is just about to overflow. Cap it and set it somewhere dark for 6-8 weeks, shaking it at least once a day. After the required time has passed strain out the leaf bits through a coarse wire mesh. Don't use filter paper as you'll want the original vinegar solids to remain in the liquid. I add a sprig of cedar into the strained bottle just to mark it as infused.

Now let's talk about Red Cedar (Juniperus virginiana). While it's berries (okay, cones) can be used the same as Junipers ashei's berries, the leaves should not be used to make tea, infused vinegars, or smoked. These leaves contain several compounds such as thujone which can cause diarrhea if consumed in large quantities. Yes, thujone is also the active ingredient in absinth, but that's none of my business. Thujone slows down the removal of alcohol from the blood so just a little bit of it cause the BOC to shoot up much higher than expected from a drink. Now, that all being said, there is historical records of the Juniperus virginiana being used for tea so like so many wild edibles.

Clover - Crimson

The sunny fields of east Texas turn fiery red in the springtime with thousands of Crimson Clover flowerheads. This durable, prolific wildflower can often be found growing profusely in road medians thanks to Lady Bird Johnson's Texas beautification program. Beware sticking your nose too close to inhale its sweet aroma as both butterflies and bees find its nectar quite delicious!

Though lacking the medicinal properties of Red Clover, Crimson Clover's flowerhead makes a pleasant tea and can be used either fresh or after drying. I've never smoked it but based on my experience with other clovers, it's likely it'll be just as good.

The seeds have a long history of being collected and ground into flour. The individual seeds are small but it's relatively easy to harvest many of them to add to other plant seeds you've gathered. These seeds can also be sprouted into highly nutritious microgreens using standard sprouting techniques.

Being a nitrogen fixer, Crimson Clover makes an excellent fallow crop for revitalizing depleted soils. They prefer near-neutral pH soil with good drainage for optimal growth. A thick mat of this will often choke out other weeds which is either good or bad depending on how hungry you are. :-)

Red clovers fill fields and country roadside ditches with bright splashes of color. They form thick colonies of plants, usually well under two feet tall. They are often planted on purpose along Texas roadside for their color and beauty.

Many homeowners wage chemical warfare on patches of white clover in their grass without ever realizing that this plant not only produces nitrogen necessary for healthy grass, it's also delicious and nutritious! Both fresh or dried clover flowers can seeped in hot water to make a fantastic, naturally sweet tea. The leaves and roots can be added to stews, soups and other simmered dishes for a boost of protein. I like adding it to tomato-based sauces whose acidity helps break down and "pre-digest" the protein, making it easier for human stomachs to digest it.

The flowers and leaves must be used either within 30 minutes after picking or left to dry for 4-6 weeks. Soon after being picked the plant starts producing cyanide compounds and in an hour or less they can become dangerous to eat. If left to dry for 4-6 weeks these cyanides will disappear. For this reason one should NOT include clover when making sauerkraut, kimchi, or other fermented greens as the fermentation process doesn't interfere with the production of cyanide.

Many yards and disturbed areas end up filled with cud weeds come the cool months in Texas. The tops of cudweed leaves can be either green or grey depending on the species but the undersides are always white-grey. They start out as a rosette but then one or more stems grows either upwards or outwards from the taproot. Cudweeds have alternating leaves with a pinnate vein structure. Stems are fuzzy and so are the leaves. When mature, the tips of the stems turn even fuzzier, reminding me of Q-Tips due to the furry nature of their tiny flowers.

Cudweeds are NOT eaten. The only recorded ways they were used was as a tea or smoked. One of its common names is "Rabbit Tobacco". Both the tea and smoke were used to treat problems breathing, especially from colds and other lung issues. The tea also helps some with coughs. While it was mainly smoked for its medicinal effects, the flavor is mild and pleasant enough that it was also smoked for pleasure. The usual Native American technique for smoking was to hold the smoke in their mouths rather than drawing it into their lungs. Be aware that pulling out a baggie of dried leaves and lighting up in public may draw unwanted attention so be smart if you're going to smoke this.
